Good evening, I'm on a lifelong journey of healthy rebalancing (and weight loss) (the rebalancing 😉). I have a sensitive digestive system and non-alcoholic fatty liver disease (fatty liver disease). This is the first plate I'm sharing. A mix of carrots with thyme and honey, pommes dauphine, and chicken crunchies made in the air fryer. Of course, I don't eat breaded stuff every day. Just for info, I only ate half of the plate, I'm saving the rest for tomorrow. Have a lovely evening everyone.

Six days after my husband Frank left to visit his daughter overseas, my phone rang and everything changed. Claire’s voice was shaking when she told me he had collapsed and was gone before she could even reach the hospital. After forty years of marriage, I had always imagined I would be beside Frank when his final moment came, not sitting thousands of miles away with a phone pressed to my ear. Claire insisted I stay home while she handled the paperwork and cremation, promising she would send him back to me. Two weeks later, a soft-blue ceramic urn arrived at my door. I held it against my chest and cried until I could barely breathe. A month passed before I found the courage to take it to the willow beside the lake where Frank and I had promised to scatter each other’s ashes.

was a sealed plastic bag containing his ashes. My hands shook as I lifted it out, but something rattled against…
