Good evening, I'm on a lifelong journey of healthy rebalancing (and weight loss) (the rebalancing 😉). I have a sensitive digestive system and non-alcoholic fatty liver disease (fatty liver disease). This is the first plate I'm sharing. A mix of carrots with thyme and honey, pommes dauphine, and chicken crunchies made in the air fryer. Of course, I don't eat breaded stuff every day. Just for info, I only ate half of the plate, I'm saving the rest for tomorrow. Have a lovely evening everyone.

*Title: My Balanced Plate: Honey Thyme Carrots with Air Fryer Chicken Crunchies*

This is my first plate I'm sharing on my lifelong health journey. I have a fragile digestive system and non-alcoholic fatty liver disease (NAFLD), so I'm learning to enjoy my favorite foods in a smarter way.

Tonight's plate was a good example: a little pleasure + lots of vegetables, all cooked in the air fryer.

*What's on the plate?*

- 3 chicken crunchies / breaded chicken fillets (cooked in the air fryer with very little oil)
- 6 pommes dauphine (small potato puffs)
- A large portion of sautéed carrots and yellow potatoes with thyme, honey, onion, and parsley

*How I made it healthier:*

1. *Air Fryer, not deep fryer:* The chicken and pommes dauphine were cooked in the air fryer, so they are crispy without being soaked in oil. Much better for digestion and for fatty liver.
2. *Vegetables are the star:* More than half the plate is carrots. They are rich in fiber, beta-carotene, and very gentle on the stomach. A little honey and thyme makes them delicious.
3. *Portion control:* I only ate half of this plate (1 chicken crunchy, 3 pommes dauphine, and the carrots) and saved the rest for tomorrow. Enjoying breaded food occasionally is okay when you control the quantity.
